Ingredients:

• 120 g baby spinach
• 125 g mixed berries (e.g. raspberries, blueberries, currants, strawberries)
• 100 g goat’s cheese log

For the dressing:
• 1 tablespoon raspberry vinegar
• 3 tablespoons olive oil
• ½ teaspoon honey
• ½ teaspoon medium-strength mustard 
• Salt and pepper

Goat’s cheese and spinach salad with summer berries

For: 2 portions

Preparation:

1. Wash and dry the spinach and berries. Hull the strawberries and cut into halves or quarters, depending on their size. Remove the currants from the trusses. Break the goat’s cheese into small pieces.

2. To make the dressing, put all the ingredients in a screw top jar, close the lid and shake vigorously.

3. Arrange the spinach, berries and goat’s cheese in bowls and drizzle with the dressing.
